Hi, I found a beautiful and pretty large population of a Helvella species which I think it is Helvella ephippium but doubt also fell on H. latispora. How can these two species be distingusihed. The lower surface and entire stem where completely covered with tufts of teeth-like projections. Stipe completely white. The largest specimens had caps almost 3cm wide.

I have consulted that key already but it is not conclusive (see comments below) so I am asking for some expert advice.
Mushroom quite small at maturity (cap no wider than 2 cm [NO] stem no thicker than 0.5 cm [borderline]; stem brownish or grayish [greyish-brown]; undersurface of cap densely hairy [YES] = Helvella ephippium
Mushroom larger than above at maturity [YES]; stem whitish[YES, but above no colour given]; undersurface finely fuzzy [MAYBE?], or bald [BIG NO]by maturity. = H. latispora

Your collection represents H. ephippium with its grey hymenium. H. latispora has a beige to brownish hymenium.
